Blueberry Muffins

Variation:
This recipe may be used to make any type of fruit or nut muffin by substituting the desired ingredient for blueberries.
Ingredients
- Blueberries 6 oz.
- Sugar 6 oz.
- Salt 1/2 tsp.
- Butter 4 oz.
- Vanilla ½ tsp
- Eggs, whole 2 ea.
- AP flour 13 oz.
- Baking powder 2 tsp.
- Baking soda 1/4 tsp
- Buttermilk 6 oz
Method: Total prep time: 30 minutes + baking time
- Preheat oven to 375 degree F
- Mise en place: Measure ingredients. Set aside. Prepare muffin tins.
- Toss blueberries in a small amount of the flour and set aside.
- Cream sugar, salt and butter until light and fluffy.
- First mix eggs and then add slowly to creamed butter/sugar, a bit at a time, until completely incorporated.
- Mix flour, baking powder and soda together.
- Add flour mix and buttermilk to butter and sugar: alternating dry and wet, starting and ending with the dry ingredients.
- Add the blueberries last and fold in by hand, mixing just to combine without breaking them.
- Fill muffin tins 2/3 (lined or unlined)
- Bake at 375°F 20-25 min or until light brown and muffins spring back to the touch
