blueberry muffins

Blueberry Muffins
Ingredients                  
  • Blueberries                  6 oz.                                    
  • Sugar                            6 oz.                  
  • Salt                                1/2 tsp.                  
  • Butter                           4 oz.
  • Vanilla                           ½ tsp                                    
  • Eggs, whole                  2 ea.                  
  • AP flour                        13 oz.                  
  • Baking powder            2 tsp.
  • Baking soda                 1/4 tsp
  • Buttermilk                   6 oz                                    

Method: Total prep time: 30 minutes + baking time
  1. Preheat oven to 375 degree F
  2. Mise en place: Measure ingredients. Set aside. Prepare muffin tins.
  3. Toss blueberries in a small amount of the flour and set aside.
  4. Cream sugar, salt and butter until light and fluffy.
  5. First mix eggs and then add slowly to creamed butter/sugar, a bit at a time, until completely incorporated.
  6. Mix flour, baking powder and soda together.
  7. Add flour mix and buttermilk to butter and sugar: alternating dry and wet, starting and ending with the dry ingredients.
  8. Add the blueberries last and fold in by hand, mixing just to combine without breaking them.
  9. Fill muffin tins 2/3 (lined or unlined)
  10. Bake at 375°F 20-25 min or until light brown and muffins spring back to the touch 

Variation:
This recipe may be used to make any type of fruit or nut muffin by substituting the desired ingredient for blueberries.
