Pain de Mie Buns
Ingredient
Bread Flour 13.12 ounces
Yeast, dry 1 tsp
Salt 1.5 tsp
Sugar 1 Tbs
Butter (soft) 1.12 oz
Milk (80 degrees) 8 ounces
Eggs (room temp) 1.5 oz

- Mix the dry ingredients together.
- Mix warm milk and egg. Add to dry ingredients and mix with dough hook just until ingredients all come together. Let sit for ten minutes (autolyse).
- Add butter and mix on low speed for five minutes. Scraped out on to table and knead for ten minutes. Bag and refrigerated for up to 24 hours.
- For mini buns divide into 1.5 oz pieces.
