burger/hot dog buns

Pain de Mie Buns
 
Ingredient
Bread Flour 13.12 ounces
Yeast, dry 1 tsp
Salt 1.5 tsp
Sugar 1 Tbs
Butter (soft) 1.12 oz
Milk (80 degrees) 8 ounces
Eggs (room temp) 1.5 oz

Total weight wanted in pounds
1.5
  1. Mix the dry ingredients together.
  2. Mix warm milk and egg. Add to dry ingredients and mix with dough hook just until ingredients all come together. Let sit for ten minutes (autolyse).
  3. Add butter and mix on low speed for five minutes. Scraped out on to table and knead for ten minutes. Bag and refrigerated for up to 24 hours.
  4. For mini buns divide into 1.5 oz pieces.
