scones

Scones
Yield: 6 servings
Ingredient                                   
  • All purpose flour           12 oz.                  
  • Salt                                  1/4  tsp.                  
  • Baking powder              1 1/2 tsp.
  • Baking Soda                   1/4 tsp.                  
  • Sugar                               2-4 oz.                   
  • Filling                               4 oz.                  
  • Butter                              4 oz.                  
  • Buttermilk                      6 oz.
  • 2 Tbl. sugar mixed with 1/4 tsp. cinnamon for sprinkling on top

Method
  1. Mix together all dry ingredients.
  2. Cut the butter into the dry ingredients until it is in small pieces.
  3. Add the buttermilk and filling to the butter and dry ingredients and mix just until a dough forms. 
  4. Place dough on a sheet pan, pat or roll it until it is approximately 1” thick and chill until firm.
  5. Cut the dough into the desired shape, brush with melted butter and sprinkle with sugar/cinnamon.
  6. Bake in oven at 400°F for 25 to 30 minutes.
Variations
Fillings may include currants, raisins, dried cherries or cranberries, chocolate chunks, orange or lemon zest, nuts and savory items. For maple/walnut scones make a paste of chopped walnuts, brown sugar, and maple syrup and fold into mixed scones.
