Breakfast time

Foods

Breakfast cooking: Eggs, muffins, etc.

Each group will make English muffins, home fries, eggs over easy/med/or hard, pancakes, omelet, blueberry muffins and scones.
  1. Wash hands, put hair back, put on aprons and get into groups. 
  2. Get supplies and decide who is doing what. Mis en place: collect all ingredients and needed equipment before you begin.
  3. Complete recipes.
Week one: Quick Breads
Day one
  • Read scone recipe
  • Scone demonstration: Scaling, cutting in butter, separating eggs
  • mix and refrigerate scones
Day two (Wednesday)
  • Bake scones
Day three
  • Blueberry muffin demonstration: creaming butter and sugar; portioning
  • Mix and bake blueberry muffins
Week two
Day one
  • mix English muffin poolish
  • Pancake demo: sifting ingredients, cooking pancakes
  • Make and cook Pancakes
Day Two
  • Mix English Muffins 
Day three
  • Shape, fry, bake English muffins
Week three: eggs
Day one
  • Demo omelets
  • Make omelets 
  • Optional: make waffles
Day Two
  • Read home fries recipe and prep (try to get them boiled)
Day Three
  • Demo Fried eggs o/e, o/m, or o/h and make (one per student)
  • Make home fries
